One reason why I love this recipe so much – other than the BOLD, zesty, Italian taste – is how it’s easily made and then stored for later. It’s perfect for lunches or delayed quick dinners. It’s one of my favorite cold pastas!
I’ve never made this recipe with anything other than Kraft Zesty Italian dressing, however, you might have a different Italian dressing that you want to try. If you do – let me know how it goes!!! I’d love to hear your feedback!
You can grab the recipe above or below. They are in different formats. If you click on the picture above you will be prompted to download a PDF that looks like the picture. - 1 SMALL BOTTLE OF KRAFT ZESTY ITALIAN DRESSING
- 1 RED BELL PEPPER
- 1 YELLOW BELL PEPPER
- 1 GREEN BELL PEPPER
- SHREDDED PARMESAN CHEESE
- ½ BOX OF ROTINI PASTA
Instructions
- Preheat oven to 350* F
- Line a baking dish with aluminum foil.
- Put the chicken in the dish.
- Cut your bell peppers into chunks and put them on top of the chicken.
- Pour about ¾ of the small bottle of Kraft’s Zesty Italian dressing all over the chicken and bell peppers.
- Wrap the aluminum foil around the chicken and bell peppers.
- Bake the chicken for 30 minutes.
- When the chicken is done, shred it up. If it needs more cooking time, pop it back in for another 15-30 minutes or so.
- Cook your pasta according to the box instructions.
- Pour everything from the dish into the pasta and stir it up. Then, add the remainder of your Italian dressing into the pot and stir.
- Let it chill in the fridge for about an hour. Put shredded parmesan cheese on your pasta salad and enjoy!
In the next few weeks I am hoping to post a few fun recipes/posts that were on the blog I used to write on, Wee Share. That blog was started by my Sister-in-Love… and now it is gone. Thankfully, I saved some of the posts and recipes from the blog so I can revive them over here at Designing Tomorrow!
