Baked cauliflower bites are a delicious way to add some veggies into your diet while enjoying the taste of something “fried”. This sourdough discard cauliflower bites recipes are great as a lunch side dish or an appetizer to serve at a function.
I began my sourdough journey about six months ago. I made my starter from scratch at home and have continued on to make many loaves of delicious bread. One thing I struggle with is the discard that comes along with feeding a sourdough starter. I hate throwing it away – so a lot of it just accumulates in my refrigerator. Over time, I’ve started making a lot of discard recipes. Sourdough discard waffles are one of my favorite recipes that I’ve found. In addition to making recipes I’ve found on Pinterest, I’ve also been playing around with adding discard to recipes that I already love and altering them to effectively use the discard.
I am a huge fan of buffalo sauce. Buffalo chicken wings, buffalo cauliflower bites, buffalo wraps, sandwiches… EVERYTHING. When I saw this recipe for cauliflower bites, I had to make them. I have loved making these over and over for the last few years. While I love her recipe as it is – I have modified it over the years to add my own spices and sourdough discard.
First, set your oven to 425 degrees F. Cut your cauliflower and wash it. Then, let it drain while you do the next step.
Next, mix together your seasoning sauce. Put your sourdough discard, flour, water, and seasonings in a bowl and mix it together.
I happen to LOVE this Frank’s Red Hot Original Seasoning blend. I use it in all kinds of recipes – it’s especially good to season chicken! It has a kick to it, but it’s not too terribly spicy. My husband, who hates all things spicy, likes when I season his chicken with this.
Once you’ve mixed your seasoning sauce, add your cauliflower to it. Make sure you coat each piece completely. Then, in a separate bowl, pour some panko in.
Place each piece of cauliflower on a baking sheet lined with parchment paper. We have these Ninja baking sheets and they are AMAZING.
Bake the discard cauliflower bites for 20 minutes. Take them out and flip each one over. Bake an additional 15 minutes.
I love to serve mine with ranch and Frank’s Red Hot wing sauce!
Ingredients
- 1 head of cauliflower
- 1 cup sourdough discard (unfed)
- 1 cup water
- 1 cup all purpose flour
- 1 tbsp onion powder
- 1 tbsp Frank’s Red Hot Original Seasoning
- 1 tbsp garlic salt
- 2+ cups panko
Instructions
- Preheat oven to 425 degrees F.
- Line a baking sheet with parchment paper.
- Cut your cauliflower into bites. Rinse and let them drain while you do the next steps.
- Make your seasoning sauce – mix sourdough discard, water, flour, onion powder, frank’s red hot seasoning, and garlic salt in a bowl.
- Put your cauliflower in the seasoning sauce. Make sure it is completely coated.
- Pour some panko in another bowl.
- Take a few coated cauliflower at a time and coat them with panko.
- Bake the cauliflower bites for 20 minutes and then flip them and bake them another 15 minutes.
